Kid Approved Cabbage Soup


This week our Bountiful Basket had cabbage in it. Not something we normally buy and not a vegetable my kids have tried. But hey, we already paid for it so why not try it! My kids not only ate it, they had seconds. And they usually cry when we have soup.

2 tablespoons olive oil
1 onion, chopped
1 tablespoon garlic (I used the refrigerated chopped kind)
2 quarts water
3 chicken bouillon cubes
1/2 to 1 whole cabbage head. I used half of a large cabbage head.
2 tomatoes diced
1 can Italian style diced tomatoes
4 carrots chopped into 1/4 inch pieces.
3 celery stalks, chopped in 1/4 inch pieces
1 packet Italian seasoning
salt and pepper to taste

1. Heat olive oil in a large stockpot over medium heat. Add onions and garlic. Cook until transparent, about 6 minutes.
2. Add in the water and bouillon to the stockpot. Bring to a boil and add cabbage. Simmer for 5 minutes until cabbage wilts down a bit.
3. Stir in tomatoes, carrots, celery, and Italian seasoning. Simmer until carrots and celery are soft, 15-20 minutes.
4. Enjoy! This would be the perfect soup for when you have a cold and need to bump up the nutrients and liquids. :)
